Raw, Cold Pressed Bush Honey is born from honeycomb built by honeybees. This late-autumn honey is a celebration of native Australian bushland.

Rich and slow-flowing, with a luxurious caramel-like texture, it is neither runny nor creamed. Notes of candy sweet eucalyptus blossom, native tea tree and flowering gums unfold across the palate, finishing with lingering woody and herbal notes from the Australian bush.

Collected only once the bees have secured their own stores, this raw honey is gently extracted and minimally processed to preserve the character of the season and the landscape from which it came. Heat shimmers over the ridge lines. Cicadas buzz loud like electricity. The air carries that unmistakable scent of flowering eucalyptus  and underneath it, the green-sharp lift of tea tree, the sweetness of fringe myrtle, the soft, golden hum of acacia. In the gullies and along the track edges: tiny wildflowers and sky-bright blooms like pink buttons, vanilla lily. All those small surprises you only notice when you stop and breathe.

This is what the bees have been working through.

They move through the season like little alchemists, gathering nectar from a whole chorus of flowering plants, turning long days and buzzing afternoons into something you can taste.

And we never mix or blend our honey. Each jar is exactly what one hive gathered, in one season, from the flowers around them.

Because it’s seasonal, we only have it for a short window. When it’s gone, it’s gone until the bees and the bush decide it’s time again.

Raw, Cold Pressed Bush Honey is born from a genuine surplus of honey from our happy bees. We gently press the honeycomb using stainless steel fruit press preserving the complex content of the honeycomb.

Our Raw, Cold Pressed Bush Honey is a testament to ethical beekeeping and environmental sustainability. We follow the Rose Hive Method, which challenges the conventional beehive method, where honey bees and the Queen are restricted. Rose Hive prioritizes honeybee welfare over convenience for beekeepers.  Our honey bees carry on with their activities, as they do in the wild, without any restrictions. At our apiary in the Blue Mountains, honey bees flourish in their natural habitat, crafting combs from their own wax and gathering resins and saps from pristine bushland to create propolis.

We only harvest the surplus of honey.  2026 harvest is from honeycomb that have been a living and breathing part of the hive for over 1.5 years. The result is a darker, golden honey with complex taste, rich in pollen, natural enzymes and plant resins.

This year we tried something different : We did not mix honey from different hives.  We bottled each hive honey and gave its a name . Each hive has a distinctive different honey
